Chocolate Avocado Pudding
Looking for an easy food swap recipe to share at summer cookouts? Look no further. This chocolate avocado pudding recipe puts a healthier twist on a classic food. We dare you to give your friends a taste before you tell them the secret ingredient!
2 ripe medium avocados , peeled and chopped
1/3 cup cocoa powder
1/4 cup honey or raw agave nectar (or other sweetener of choice)
1/2 cup milk (regular or almond milk, coconut, etc.)
1 1/2 teaspoon vanilla extract
Blend all ingredients, until smooth, in a blender, food processor or using a hand held mixer. Serve immediately, or chill first.

Spaghetti Squash Hash Browns Food Swap
This week's food swap is spaghetti squash hash browns. These hash browns will be a great addition to any Saturday morning brunch menu. Be sure to try this healthier version of an old favorite that will be sure to delight your taste buds.
- 2 cups cooked & shredded spaghetti squash (about 1/2 small cooked squash)
- 1 tablespoon oil (olive oil is a good choice)
- Seasoning to taste
Heat the oil in a large non stick skillet over medium heat.
Press the water out of the squash with paper towels.
Form little patties (2 tablespoons or so) by pressing the squash firmly between your palms.
Place the patties gently on the warmed skillet and let cook for 5-7 minutes per side. Only flip these once if possible to get the nice browned effect.
Transfer to paper towels to drain, then serve warm. Sprinkle with some salt if desired.

Cauliflower Pizza Food Swap
Cauliflower may not be your go to vegetable but it makes an excellent food swap when you want pizza. With a little planning and preparation you can use cauliflower pizza crust to enjoy your favorite pizza.
- 1 medium head of cauliflower, broken into florets
- 1 egg
- 3/4 cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- 1 ½ tablespoons coconut flour
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- Freshly ground black pepper
Put ½ of the cauliflower florets into bowl of food processor, pulse until it resembles rice (about 30 seconds). Transfer into a large bowl and place other ½ of florets into food processor to repeat above.
Microwave pulsed cauliflower for 5 minutes OR add all to a pot with 1 inch of water and bring to a boil to let it cook for 5 minutes with a lid on.
Preheat oven to 425 degrees F. Line a large baking sheet or pizza pan with parchment paper.
Let cauliflower cool for 15 minutes. Once cool enough to handle, transfer cauliflower to a clean dish towel or cheesecloth. Squeeze of excess moisture -- make sure to do this until no water comes out and the cauliflower is dry. This is very important to the success of the recipe.
Next transfer cauliflower pulp to a large bowl and add in egg, mozzarella, parmesan, coconut flour, garlic powder, oregano, salt and freshly ground black pepper. Stir to combine and form a soft dough.
Place dough in the middle of the prepared pan and push out with your hands to form a 9-10 inch circle, with about ¼ inch dough thickness.
Bake for 20 minutes until crust is firm and slightly golden brown. Remove from oven, then top with pizza sauce and cheese (or whatever your heart desires). Bake for 5-10 more minutes until cheese is melted, then turn broiler on for 1-2 minutes to get cheese nice and golden brown and bubbly. Make sure to watch carefully!
Remove from oven and allow to cool for a few minutes minutes before cutting into 8 slices and serving. Serves 4, 2 slices each.

Want to know a few secrets to a peaceful marriage?
Secret ONE: Peace comes when you treat your relationship with the Improvisation Mantra of “YES AND…” NOT “Yes, but…”
Yes AND suggests you are listening and considering what is being offered by your spouse; AND, you desire to build on it with what you have to offer, always seeking to be in the moment and looking for cohesive connection opportunities.
“Yes, but” is dismissive and tells the lie that you are considering his/her side when in fact you just are waiting for the window to present YOUR side, your way, your pre-fashioned outcome.
Approach each exchange with your spouse as a “YES AND” opportunity and expect good things to happen!
Peace comes when we accept the limitations of others. Sometimes we expect too much and impose unrealistic expectations on others thus priming the stage for disappointment. Learn to meet people where they are at and come alongside them for the journey. Stressing over the limitations of others will SPILL over into your marriage and manifest emotionally, mentally, physically or spiritually. It’s called daily baggage and it is often inadvertently dumped on the spouse.
Peace comes when you CEASE trying to get your spouse to change. You don’t have the tools to make this happen. When we cease trying to get others to change—we can offer alternative ways of handling and or viewing a situation but ultimately we must rest in the fact that the decision for someone to change is NOT our problem to own.
Do you seek daily to find opportunities in the little things to connect with your spouse or are you often stuck in yesterday’s list of disappointments as you begin each day anew? Not saying this is easy, but a big step is to become aware and take action. Perhaps the assistance of a marriage enrichment group or coach may go a long way to helping you and your spouse produce the fruit of peace in your marriage.
Seek peace in your marriage and pursuit diligently. Love and live well!

Declious Fudge Brownie Food Swap
Have you made changes to your nutrition but still want to enjoy your favorite foods? We have good news; you can. With some research and planning you can prepare your favorite recipes with a few food swaps to make them healthier.
Over the next few weeks we will share some of our favorite food swap recipes. Our first recipe is Black Bean Avocado Fudge Brownies. The ingredients in this recipe will surprise you and your taste buds.
Black Bean Avocado Fudge Brownies
- 1 - 15 oz can of black beans, rinsed and drained
- 1 egg
- 2 egg whites
- 1/2 of a large extra ripe avocado
- 1 teaspoon coconut oil
- 2/3 cup unsweetened cocoa powder (important to use a VERY good quality powder!)
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons pure vanilla extract
- 2/3 cup brown sugar
- 1/3 cup chocolate chips of choice, plus 2 tablespoons for topping
Preheat oven to 350 degrees F. Grease a 8x8 inch baking pan.
Place all ingredients besides chocolate chips into blender or food processor. Process or puree until ingredients form a smooth batter. If the batter is WAY too thick and won't process then add in a teaspoon or two of water. This batter needs to be very thick in order to produce fudgy brownies. Add in 1/3 cup chocolate chips and fold into batter.
Pour batter into prepared pan, sprinkle with 2 tablespoons of remaining chocolate chips. You can also fold in nuts or swirl in peanut butter. Bake for 25-35 minutes or until knife inserted in center comes out somewhat clean and top of the brownies begin to crack.
Cool pan completely then cut into 12 delicious squares.

What inspired you to become a personal trainer?
The great personal trainers that have guided me through my weight loss and fitness journey have inspired me to become certified. Their spirits, dedication, knowledge and encouragement have been contagious and has sparked my desire to support others in achieving their wellness goals.
What do you hope clients will learn by working with you?
I hope I can teach clients that their goals are achievable.
